Creamy Tuscan Kale Walnut Beans

After discovering the art of soaking dried beans I decided I wanted to experiment with Pinto beans. Ive only ever used Chickpeas, and Black beans and figured it was the same premise and that I should just bite the bullet and try! Great news, Its super easy and makes for a delicious filling main or side dish! 

Creamy Kale Walnut Pinto Beans

2 cups dried pinto beans (This can vary depending on how big a batch you want) 
1 bunch Kale
4 cups chicken or veggie broth
5 cloves Garlic
4 - 6 tbs Olive oil (depending on your personal preference)
1 cup chopped walnuts
1/2 cup shaved parmesan 
1/2 - 1 cup plain yogurt (Depending on how creamy you like your beans)
1 tbs dried or fresh dill
1 tbs curry powder
2 - 3 tbs smoked paprika (be free with the pap, but make sure its a flavor you love before going nuts)
1 - 2 tbs pepper
1 - 2 tbs salt (To taste)
1 tbs maple syrup 

FIrst you want to pre-soak the beans for 1-2 days and get them really nice and soft, I like to soak for 1 day then drain the water and let them sprout over night even though I will be cooking them. 

Then in a large pot simmer your garlic crushed, with 3 tbs of olive oil. After about 2 mins add all of your spices and just coat them with the oil and toss your beans in there. Mixing the beans with the spices dry before adding water really enhances the end flavor. 

From here add all of your broth, and maple syrup then stir and bring to a boil. Once your beans are boiling let simmer for 1- 1.5 hours (Depending on how soft you would like your beans to be. 

After 1 hour of simmering toss in your kale, walnuts, and parmesan. Once the bean consistency is to your liking turn off heat and stir in the yogurt to get the creamy texture. The yogurt was actually an after thought, but I loved it so much I decided to add it to the recipe! 


Always remember the kitchen is your studio and dinner is your canvas, play around with flavors and don’t worry if something might not be what the master chefs use. Follow your intuition and you will always give your body exactly what its needing, you also might surprise yourself and family with your taste sensation.
